Nic Gignac

With more than 20 years of culinary experience, Nic has built a career defined by creativity, versatility, and a passion for local ingredients. After beginning as a dishwasher in Ottawa and graduating from Canadore College's Culinary program in 2007, he worked his way through every role in the kitchen, gaining experience across Canada in restaurants, catering, private chef services, vineyards, and hospitality. He has owned and operated acclaimed establishments including Café Drip in Regina and The Miner's Son in North Bay, helped launch Stack Brewhouse in Sudbury, served as Executive Chef for the Tide & Boar Restaurant Group in Moncton, and most recently joined The Block Public House, where he is developing new menus and reviving his popular Chef's Table experience. Classically trained in French cuisine, Nic draws inspiration from a wide range of culinary traditions while showcasing the flavours of Northern Ontario through locally sourced ingredients. His accomplishments include culinary competition awards, catering for major events, film productions, and the Lieutenant Governor of Ontario, and he continues to bring his passion for exceptional food to every kitchen he leads. Outside of work, he enjoys spending time with his wife, two sons, and golden retriever, Leia, as well as fishing, camping, hockey, baseball, and exploring Ontario.
